QUINOA & CORN SALAD WITH TOASTED PUMPKIN SEEDS



As much as I love Italian food, I am really trying to eat healthier in 2010...Can't you tell by the pizzas, pot pies and cakes I have been making lately? Never mind the 1/4 pan of Nutella Brownies I ate on Sunday!


After seeing the movie "FOOD INC" which really enlightens us on how food is REALLY produced in this country, my thoughts have turned to eating chicken that gets to run around a farm, instead of being locked in the dark with thousands of other chickens with nowhere to go, and eating whole grains with more vegetables and LESS cheese!


Quinoa (Keen-Wah) is a gluten free seed that is derived from the goosefoot plant. It originates in the high Andes of South America, and has been a staple of the people for thousands of years. It is considered a complete protein and is easy to cook.


I found this recipe on Martha Stewart's Whole Living website, and decided this was a healthy alternative to baked ziti!

Has anyone ever tried a quinoa recipe before?

I will stick to the baked ziti!!...did you hear about the report Fox News did on the bagged salad that is suppose to be safe to eat but isn't safe to eat...nothing is safe anymore...it's a sin...Just when I was getting used to eating salad and healthy foods!! Bring on the Nutella brownies!

Wow, the dish looks delicious. Well plated, too.I made dinner using quinoa night before last. Sweet onions, mushrooms and asparagus tips sauteed and then put over a bed of quinoa. It's my second time cooking quinoa, i used broth this time which i thought gave it more flavor. i still need to do some modifications. It's and interesting grain. I think i may start treating it like couscous and adding similar ingredients to perk it up a bit.

I have a big bag of quinoa in my pantry right now Linda. I am also trying ti incorporate more whole grains into our diet. It definitely needs to be infused with flavorings of some sort as it is bland on it's own, but it is a healthy grain.

Yes I have tried it at a friends home but have not made any myself. I am so trying to eat healthy lately plus a bit of dieting. I feel so much better without sugar and carbs but it is like an addiction to me. A hard habit to break. If I am not baking and tasting my recipes I am not fit for companionship and those are words from my family:)
